Lots of cookies. I cut out four shapes for each child, and there are 21 kids in the class. Thats 84 cookies, plus some extra. Prepare and color the icing ahead of time. Because these are younger children, I skipped the black and red, the worst stain offenders. I chose pink, orange, yellow, lime green, blue, purple and white. I made three of each, for 21 bags, so each child could have a bag at the same time. Ideally, Id have had even more bags to avoid fighting over colors, but Im only one person and it takes forever to make all those icing bags. Dont mess with the tips and couplers since youll be tossing these at the end. Put a scoop of icing, not too full for little hands, in a disposable decorating bag, close tightly with a rubber band, and right before decorating, snip 1/4 to 1/2 inch from the end. There are many ways to learn from Dugantsi. She oversees a private Facebook group called Club Cookie Academy, where she hosts two classes monthly at the cost of around $10 per month. Dugantsi has also produced several pre-recorded courses and numerous standalone project tutorials available through Vimeo on-demand.
The Cookie Academy Basics course, for example, is comprised of seven lessons, available individually for about $5 or roughly $30 for the entire course. The shorter cookie project tutorials cost around $10 each. If you seek to learn one-on-one from the master herself, Dugantsi teaches private online classes through Zoom, starting at approximately $200 for a three- to four-hour session.

If you own a pastry shop, maybe youve got some customers that have told you theyd love to learn how to make a wedding cake like the one you did for the Johnson family. Amber Spiegel’s channel has nearly 800,000 subscribers, with some videos garnering more than 15 million views. Though there are a few basic technique videos, including how to flood a cookie with royal icing, most of the videos do assume that you have a basic understanding of standard techniques like piping, flooding, and wet-on-wet royal icing.
Videos are no-frills, with Spiegel showing you how she makes gorgeous cookies with stock music playing there is often no voice-over. But for folks who are familiar with decorating, watching her create the cookies is enough to be able to replicate the technique and cookie itself.

The icing hits the cupcake. The cake gets baked. This is where you will soon find out if anyone wants to take the class youre selling.
What makes Michelles process so great is that you dont need a BA in computer technology to start accepting payments for a class. Michelle makes it super easy by essentially putting a buy button and writing a brief description of the class. You can see exactly how this looks at Michelles course directory.
Assuming you dont want to take payments for your class in person with cash or a personal check, youll also need to setup something called a payment processor. These are affordable and easy to use. Michelle uses PayPal to sell classes. PayPal is free to use, but will take a small commission each time you make a sale. Its totally worth it for the easy of use and will allow you to create buttons and links for free on your website so people can pay online. You can also create an account with EventBrite if you plan to teach in-person classes.
Pro Tip: If youre going to be teaching the class from your home or even online, make sure to limit the number of students that can participate. If you are doing the class in your house, youll have a limited amount of space so five students may be all you can handle.

The funny thing about coming up with a winning class idea is that you actually dont need to come up with something unique or even on your own. Instead of brain-storming class topics, you should stop, listen, and think of ways to solve other peoples current problems with your class.
: Private groups in Facebook are an excellent resource for listening to other bakers challenges. Michelle recommends joining a few groups to understand the common problems that your audience has. Big problems like making cloud-like buttercream frosting could be a major struggle to this market.
Listen to People You Know: If youve got friends or family members trying to accomplish the same objective as a class you want to teach, listen to their struggles. The struggle is where you can uncover a winning class idea.
Research on Amazon: A simple way to confirm theres people that want to learn what youre teaching is to see if theres books on the same subject being sold on Amazon. If there isnt a book already covering the topic you want to create a course around its a sign theres no market for the topic.
Once you find a book topic thats covered on Amazon then look to the negative reviews for that piece. See what people are saying is the gap in the book or what could be improved.
