What Are Royal Icing Transfers

Royal Icing Transfers are edible sugar decorations prepared from royal icing. To put it simply Royal Icing Transfer is basically royal icing that was piped or spread on a piece of wax paper, parchment paper or an acetate sheet, and it was left to dry.

Once royal icing decoration dries it can then be removed from the backing material. Then these sugar decorations can used be used to adorn cookies, cakes, cupcakes and gingerbread houses. They can prepared ahead of time.

How To Decorate Cookies with Icing: The Simplest, Easiest Method

There are two ways I would recommend decorating sugar cookies with royal icing. The first is to use thick icing to pipe a border around the edges of your cookie, then fill in with flood consistency icing. The upside to this approach is that you get a barrier of thick icing to help hold in the flood consistency icing, in case you are worried about getting it too thin the first time you attempt royal icing.

If you take this approach, definitely color the icing while it is still thick, then thin out half of each color so that both consistencies are the same shade instead of trying to match colors later on. This takes a little more effort and forethought, which is a negative for me, but still worth trying at least once. The other downside is that a border of thicker icing is usually visible in the finished cookie.

On the other hand, you can thin out all of your icing from the get-go and use flood icing to both outline and fill your cookies by piping the border with flood icing and then immediately using the same consistency icing to flood the middle of the cookie, using a toothpick or scribe tool to fill in gaps between the border and the flooded center.

Always Always Make More Royal Icing Of Each Color And Consistency Than You Think Youll Need

I made the mistake once, and ONLY once of not coloring enough royal icing for my cookies. If youre working with uncolored royal icing, its not big deal because you wont notice slight differences in consistency once the icing has dried.

BUT, if youre working with colored icing, its very hard to get the color just right. And in case you didnt know, icing darkens as it dries.

Can Royal Icing Be Flavored

HOW TO DECORATE COOKIES WITH ROYAL ICING, FOR BEGINNERS (THE BASICS)

Absolutely! Almond, vanilla or coconut extracts are all delicious ways to flavor up royal icing. The meringue powder we use is already flavored so we typically dont need to flavor it any more. If you do want to flavor your icing, just make sure to use CLEAR extracts so you dont mess up the white color. Also, be really careful adding those extra liquids because even a little bit will change the consistency.

How To Store Royal Icing

Royal icing will keep for quite some time. Store it in a sealed container, otherwise it will dry out. Store it at room temperature or in the refrigerator and then mix again just prior to using.

These cookies will last for up to two weeks stored in an airtight container. We like to package the cookies up individually in small cookie bags. Once packaged, you can ship them in a sturdy box. Everyone loves these cookies because they are delicious and gorgeous.

We know that decorating cookies might look intimidating. But trust me when I say that if we can do it, you can do it! Just go for it and make some delicious and beautiful cookies.

My Favorite Royal Icing

Here is my classic easy royal icing made with meringue powder. Its easy to work with, sets quickly, and wont break your teeth when it dries. It has the most delicious taste and texture and makes decorating sugar cookies FUN and SIMPLE. Use this traditional royal icing recipe for both flooding and outlining your sugar cookies!

This is the only traditional royal icing I use. Its my favorite because its easy to work with, sets quickly, and doesnt require raw egg whites. And, best of all, it doesnt have a hard cement-like texture. It wont break your teeth like other royal icings!

Watch Out For Bleeding With Royal Icing Transfers

For those of you not familiar with royal icing transfers, they involve piping a design onto parchment paper with royal icing, letting it dry, and then applying it something else .

When I first started using royal icing transfers, Id drop my transfer onto the wet surface of my royal icing. I quickly learned that if your royal icing transfer is a light color while the royal icing youre dropping it onto is a dark color, your transfer may very well soak up the dark coloring.

This doesnt always happen, but to be on the safe side, I now glue my transfers onto the surface of the dried royal icing with a little white royal icing.

I tried my first attempt at decorating cookies with royal icing in early December. It took me six hours to decorate 32 cookies. It was so frustrating and I stayed up until 3:00am! The biggest problem I had was getting the consistency right. I filled the bags a few times only to realize I had to remove the icing because it was either too thick or too runny. The tips I had were too large or too small and I didnt have enough bags for the different colors of frosting.

The royal icing cookies turned out great, but the process was so painful that I doubted I would ever try them again.

How To Dip Cookies

  • Dip one end of each cookie into ground pistachios, hazelnuts, pecans or other nuts while the chocolate is still wet.
  • When the first coat has set, apply another color of chocolate. Try dipping one half of each cookie in dark chocolate, and the other half in white. You can even color white chocolate a nice pastel color: use candy coloring pastes from craft stores or kitchen supply stores.
  • Use a pastry bag to drizzle stripes on cookies for an elegant touch.

How to Decorate Cookies with Royal Icing

If you’re new to royal icing, try piping dots and lines for a clean, simple look. Practice on a sheet of parchment if necessary. Once you’ve gotten the hang of it, you can move on to more advance techniques like flooding. To fill in, or flood, a cookie with a solid color of royal icing, you must first make a border with thicker royal icing. The flood icing should be a bit thinner, so that you can easily spread it and contain it within the border.

Its Time To Decorate Some Royal Icing Cookies Yall

Here are some of my favorite tips for decorating sugar cookies with Royal icing:

  • Use a piping bag with a small Wilton tip for the piping icing. You can use anything you like for the flood icing. Some people using a piping bag with the end clipped off. I use a plastic bottle or a tipless bag. Outline your cookie using the piping icing and flood the center with the flood icing. You can use a toothpick to drag your flood icing to the edges/corners. Heres a picture of my setup.
  • Create a clean/well prepped decorating station: I always have my piping bags, bottles, toothpicks, napkins, extra tips, etc. before I start decorating sugar cookies. I also use a Pampered Chef Cutting Pad on the countertop.
  • After flooding your cookies, tap them gently to work out any air bubbles. You can also use toothpicks to pop any air bubbles. Do this right away.
  • Speaking of toothpicks, keep several on hand. The piping tips often clog as you work.
  • If youre adding multiple colors to your cookies, let each color dry and then add the next color.
  • Let the cookies dry for five to seven hours before packaging. They could and should be left out in the open during the drying process. Many people worry that the cookies will grow stale but the opposite occurs! The royal icing locks in the freshness of the cookie and its just as yummy hours later.
  • Store these cookies tightly covered. They will last a week. Frozen, they will last a couple of months!

    Different Consistencies For Different Techniques

    You might notice that the humidity in the room affects the consistency of the icing. Your recipe should be adjusted accordingly. It might be tricky at first, but dont get discouraged! Once you get the hang of it, youll even develop your own preferences for thicker or thinner icing.

    For example, youll probably want thicker icing for outlining. For flooding , youll want your icing on the thinner side. This allows it to blend in seamlessly on top of your cookieit looks so nice and professional! A good rule of thumb is that one tablespoon of water will thin one cup of icing to flooding consistency. Remember to cover your icing with plastic wrap when youre not actively using it so it doesnt get crusty!
