Fondant Layer Cake Class At Carlo’s Bakery
After a great afternoon decorating and chatting away, I made my way back to the main bakery. There was no way I was leaving without trying one of these famous lobster tails… and maybe some cannoli.Because we had taken a class, a few students and myself got to bypass the line and head straight in. I spent a little while taking a look at what was on offer, and I so wished I had a bottomless pitt of a tummy so that I could have tried everything!
So glad I finally made it out to Hoboken to this world famous establishment. There’s nothing more heartwarming than to see a thriving business that was created by a family with families in mind. So looking forward to the next series, currently being filmed. A big thank you to the fabulous instructors for their assistance and enthusiasm! These are the faces behind the hard work at Carlo’s. I’m sure you can imagine, there’s a lot more that goes on behind the scenes than what we see on TV!

I’m going up to New York City for vacation and was looking in to visiting Carlo’s Bakery. When I was on the website I saw that they offered classes. Has anyone been to one? Is it worth my time? Thanks so much!

i took a baking class and a decorating class right after they opened them. i had such a good time the staff is so awesome and the classrooms were so nice. i really felt like part of the famiglia and i learned some tricks i wouldnt have thought of. and you get to take home whatever you make. totally worth the money.
Icing Bonds This Family Together
Buddy Sr., the original Cake Boss, followed in the path of his father and grandfather, both bakers in Sicily, and bought Carlos Bakery from Carlo Guastaffero in 1963. He proudly ran the bakery for over twenty-five years before moving it from residential Adams Street to its current and more central location on Washington Street in Hoboken. The relocation allowed the bakery to grow its customer base and was part of Buddy Sr.s dream to make Carlos a household name. Buddy and his four older sisters were raised in Little Ferry, NJ -their formative years spent watching dough being rolled out, cakes being iced, crostata being baked and cannolis being filled. When Buddy was 11, he began working at the family bakery alongside his father. My dad was my best friend and idol -anything to spend more time with him was important. In the precious years they worked at the bakery together as a father and son team, his dad passed on his wealth of baking knowledge and instilled in him a cast iron business sense and a drive for success.

Goldbelly And Carlos Bakery To Host Virtual Holiday Cake Decorating Class
Goldbelly and Carlos Bakery are inviting fans to join a live cook-along session: holiday cake-decorating with The Cake Boss Buddy Valastro of Carlos Bakery and Goldbelly founder and chief executive officer Joe Ariel.
Interested individuals must order a DIY Holiday Cake Kit on Goldbelly before Monday, December 14 at 11 pm EST. By placing an order, they will automatically be enrolled in the exclusive Zoom event. It Took More Than 100 Years To Open More Locations Of Carlos Bakery

Obviously, exposure from Cake Boss resulted in increased business, as in lines out the door at Carlos Bakery. In fact, in 2010, the corner of Washington and Newark Streets was renamed Carlos Bakery Way. Theres now a line that persists outside of what is now known as the original Carlos Bakery .
In 2011, the Cake Boss Cafe opened at the Discovery Times Square exhibit space more than 100 years after Carlos Bakery opened in 1910. Buddy Valastro started delivering the bakerys goods like cannoli and lobster tails but not the elaborate cakes from the show to the new branch location on a daily basis.
Now, Carlos Bakery has a bakers dozen locations across the country. Were talking more bakeries in the northeast, as well as Florida, Texas, and Minnesota, and as far west as Santa Monica.
And while a few more inventive Carlos Bakery operations exist in Canada, the only official locations outside of the U.S. are in Brazil.

Hoboken’s ‘cake Boss’ Offers Cooking Cake Decorating Classes In Jersey City
Wanna learn how to cook like a boss?
Carlos Bakery, the famed home of Hoboken’s “Cake Boss” Buddy Valastro, has opened a cooking school in Jersey City.
At the school, located at 631 Grove St., students can learn how to decorate cakes and cook.
Two-hour cake-decorating classes will be held today at 7 p.m., Nov. 26 at 9 a.m., 1 p.m. and 5 p.m. and Dec. 3 at 9 a.m. and 5 p.m. The class is open to those 10 or older.
A cooking class covering ravioli will be held Dec. 3 from 1 p.m. to 3 p.m., for those 12 or older.

Cakes are prebaked and prepped with buttercream, so once we had our cakes we were ready to work. Full disclosure, I am not a creative person. My head actually hurts when its time to paint or sculpt or build. My daughter is the complete opposite and is creative and talented. I thoroughly enjoyed watching her think of a plan, make her creations out of fondant and see her vision through. She kept up with the adults in kneading the fondant and using the sheeter, and needed no help from me . My fondant laid sloppily on my cake, while as you can see, hers went down easily.

After tucking the fondant in and cutting the excess, its time to make decorations out of fondant and then stretch out the white fondant trim to go on the bottom edge. Sarah showed us shells and other things found on the beach, but I saw decorators making shark fins, inner tubes and more. My only thought was a beach towel, so I made a JFF , towel, and JFF letters for my trim. The piping gel and the sand finish out the decorating and before you know it, two hours have passed and your cake is boxed and ready to go home. And to be EATEN! Our cakes were a vanilla layer, a chocolate layer and fudge in between. It was truly delicious and one cake served 12 people!

Classes are $125/person pricey for sure but consider the class a birthday or graduation present, one that comes home with a Carlos Bakery cake . We didnt see any stars of the show during our visit, but filming is happening now, and its not uncommon to see familiar faces walking around. It was an experience like no other, and one we wont forget!

Carlos Bakery Actually Dates Back To 1910
So many associate Carlos Bakery with Buddy Valastro and the TLC show Cake Boss, but the name and business date back to Carlo Guastaferro a pastry chef and Italian immigrant. Yes, that would be the Carlo. Chef Guastaferro opened the bakery “on a quiet street” in Hoboken, New Jersey, in 1910. Guastaferro ran the bakery for decades before hiring Bartolo Valastro, a teenager from Sicily who already had some baking experience from becoming a bakers apprentice at just seven years old.
Valastro, who later became known as Buddy Sr., bought Carlos Bakery from Guastaffero in 1963. After more than 25 years of operation, Valastro moved the bakery from the quiet Adams Street spot in residential Hoboken to the more centrally located suite along Washington Street.
Standing across from Hoboken City Hall, the bakery picked up some momentum, attracting customers with its inviting maroon-and-white awning. And that all part of the plan. According to Carlos Bakerys own website, it was “part of Buddy Sr.s dream to make Carlos a household name.” Looks like hed be happy with where its ended up.
Buddy Valastro Jr Took Over Carlos Bakery As A Teenager
In 1994 when Buddy Valastro Jr. was 17 and still in high school, Buddy Valastro Sr. died. Shook, and donning his fathers St. Anthony medallion , Valastro took over at Carlos Bakery. Valastro says in the early days, it was tough getting his four older sisters to take any direction from their kid brother, resulting in some difficulties. Same went for the Carlos Bakery employees at the time.
Other roadblocks presented themselves. One of the bakerys signature items was the lobster tail, “an Americanized version of the Italian sfogiatelle pastry,”according to Eater. Carlos had been selling them since 1910 under the original owner, Carlo Guastaferro. The pastry uses sfogliatelle dough, something Valastro struggled to replicate after his fathers death. But soon, according to the Carlos Bakery website, Valastros father apparently came to him in a dream and revealed the mysteries of the lobster tail. Valastro nailed the dough the next day.
During these first years, Valastro also had to become a pro at fondant and decorating something that would soon become key to the Carlos Bakery name and style.

Some Carlos Bakery Cakes Definitely Went Off The Rails
One has to wonder if Carlo Guastaferro ever pictured a giant NASA shuttle cake coming from his little New Jersey bake shop. In the beginning, Buddy Valastro struggled with lobster tails. In more recent times, he and a small team struggled to get a 7,000-pound Transformer Cake featuring Bumblebee into the showroom.
Throughout the history of Cake Boss and the recent history of Carlos Bakery, the cakes have definitely gone overboard. We do think a few are pretty great especially the entire city block cake made for the 40th anniversary of Sesame Street. And then theres that Worlds Largest Quilt Cake.
But a few more are just the worst. Theres the $30 million , plus just insane creations like the ugly feet cake and a literal toilet cake. Also, the cake made to look like Buddys wife Lisa is kind of scary. But the biggest blunder may be the Wrigley Field cake.
The giant stadium-shaped dessert clocked in at 25 square feet and 400 pounds. It was made with chocolate, vanilla, chocolate fudge, and chewable baseball players. However, those were just about the only parts that were edible. The Cubs cake ended up in the dumpster, and . Bad publicity started brewing, and The Cubs had to issue a statement: “The team made a decision not to serve the edible portion after the cake was on display outside Wrigley Field for most of the day.”
