Devils Food Sheet Cakes
To Invert Cakes: Lay a sheet of parchment paper on top of cake.
Set another half-sheet pan on top.
Flip the two pans over.
Remove top pan and peel off Silpat mat.
Use the bottom of a 6 cake pan, with removable bottom, as a template.
Cut four rounds from each sheet cake.
Stack the cut layers with parchment paper.
Cut cake scraps into cubes. Let dry in oven.
When cool, process in food processor to fine crumbs.

How Much Were The Supplies

Aside from the fees and materials, I did purchase a few more tools. During the course of the class, Wilton/ Michaels tries to sell you some of their other tools, which is to be expected but some of the tools are actually useful. There are some tools I would have bought but Melissa already has most of them in her kitchen. Some of the tools I purchased later on for course one.

How To Assemble The Cakes:

Set up cake pans: Line with a cake board in the bottom and acetate cake band around the inside of the pan.
Four layers of cake ready to stack in pans with chocolate pudding.
Fill a piping bag with Bittersweet Chocolate Glaze at piping temperature: 68° 70° F .
Start stacking the cakes by placing one layer of cake in the bottom,
Pipe a dam around the outside edge of each layer.
Fill the center of the dam with Old-Fashioned Chocolate Pudding
Stacked and filled cake ready to freeze.
Wrap cakes and freeze overnight.
Frozen Cake: 4 layers of cake with 3 layers of Old-Fashioned Chocolate Pudding
While frozen, peel off acetate band. Ready to finish cake.
Cake ready to put on the finishing touches.
Icing the cake with Bittersweet Chocolate Glaze: at spreading temperature 72° 74° F .
