You will be provided with unbaked sugar dough to roll out your desired shapes. Your teacher will then bake your cookies for you so you can get to the super fun decorating part. Sugar cookie decorating is instructed by one of our very talented teachers. What a great way to spend a day! Helpful Tips When Working With Meringues
As youll see in the video, whipping up a batch of meringues is not difficult, especially with this meringue recipe as it is very simple! However, I wanted to list a few helpful tips to ensure the process goes smoothly!
- Your mixing bowl and whisk attachment must be completely free of grease. Otherwise, your meringue will not whip up properly.
- Meringues can be effected by humidity. Try to avoid whipping up a batch of meringue on very rainy or humid days as the moisture in the air can be absorbed by the delicate egg white & sugar mixture, preventing it from whipping up properly. Also, after baking, meringues may soften slightly in humid conditions.
- When tinting the meringue, gently fold in the color as the meringue can deflate.
- Pipe your meringues immediately after youve achieved the stiff peak stage . Meringue that isnt used soon after making may need to be rewhipped back to stiff peak consistency.
Meringues can be baked and stored in an airtight container at room temperature for 3 weeks, or frozen for longer.
You’ll want to use the lowest rack position in your oven. Preheat to 175 degrees
Line baking sheet with parchment paper.
It is very important that your mixing bowl & whisk attachment/beaters are completely clean & free of grease so that the egg whites whip up properly.
In your mixing bowl, beat the egg whites & salt at medium-high speed until foamy and soft peaks form .
Pipe the desired shapes onto parchment-lined cookie sheet.

Michaels Basic Cake Decorating Class Day 2
Above is the cake I decorated for day 2 of my Michaels store cake decorating class, basic level.
This weeks class was much more hands on, as last week we pretty much just watched our instructor make icing and decorate a cake. This time we had to bring our own cake and 2 batches of homemade icing, along with our materials from our kits and instruction booklet. I also brought along some icing gel colours to make the icing different shades.
When I got to the class, the first thing we did was level the tops of our cakes and then flip them upside down, as the bottom of the cake was much sturdier to ice than the fluffy top. It was then optional to cut our cake in half and fill the middle with either icing, jam or pudding. I brought along chocolate pudding mixed with strawberries.
We then iced the cake with our icing and then learned how to create the cupcake design with clear piping gel. Im not a big fan of piping gel, as I cant see myself using it too often. I would much rather learn how to make flowers, which will be next weeks lesson when we bring cupcakes!
The cupcake was piped with a #12 icing tip and the top border was piped with a #18 icing tip.
Things I learned in tonights class:
1). If you stick the icing in the fridge, remove it more than 2 hours prior to your class. My icing was still a little cold and stiff, thus spreading it was a little difficult.

Dugantsi is considered a true artist by many of her students, who study with her as though apprenticing to a revered master. As one student puts it, “Ms. Dugantsi is very clear and precise in her teachings. I really love these classes, and I am very happy I found her, and that she keeps them very affordable. Ms. Dugantsi is a true artist, and I really appreciate that she is willing to share her knowledge.”
There are many ways to learn from Dugantsi. She oversees a private Facebook group called Club Cookie Academy, where she hosts two classes monthly at the cost of around $10 per month. Dugantsi has also produced several pre-recorded courses and numerous standalone project tutorials available through Vimeo on-demand.
